Making gundruk at home in the US - ingredient sourcing guide

After years of trying, finally got the fermentation right. Key: use mustard greens from the Asian grocery (HMart has them), dry them in the sun for 2 days, then ferment in a covered jar for 5-7 days at room temperature. Works great in Dallas winters.

I had no idea you could make gundruk in the US! Do you use any special container or just a regular mason jar?

Wide-mouth mason jar works perfectly. Make sure there is no standing water - just moisture from the leaves. Cover loosely so gas can escape.
